Pollo Alla Soto

Boneless breast of chicken charbroiled and topped with blended Italian cheese. Served in our Zia's white wine lemon butter sauce with cracked pepper, fresh garlic and sliced mushrooms.


Ingredients

2- 8 ounce boneless chicken breasts
12 ounces Zia's White Wine Lemon Finishing Sauce
2 teaspoons finely minced garlic
1/4 teaspoon coarsely ground fresh black pepper
1/2 cup shredded fontinella or blended Italian cheese


Process

Prepare medium fire in grill.
Grill chicken breasts over medium heat until juices run clear when pierced.

Bring wine sauce to a simmer over low heat. Add garlic, mushrooms and pepper. Simmer until mushrooms are tender. Approximately 5 minutes.

Remove chicken from grill and top with cheese.Cover with Zia's wine sauce.
Garnish with fresh parsley and lemon wedge.

( If not using grill preheat oven to 350 degrees. Lightly coat baking dish with butter and bake approximately 20 minutes or until juices run clear).
